The concept of just adding water to foods to create instant meals dates back to at least the 14th century. The Aztecs of Central Mexico created pinnolli — ground and dried cornmeal that could be reconstituted with water — for travelers who needed quick and easy meals on the road. It’s one of the earliest examples of instant foods.
The Maggi bouillon cube, introduced in 1908, ushered in the modern era of ready-to-eat foods that require nothing more than water. Powdered instant gravy was introduced around the same time. The trend took off during World War II, when the U.S. government developed high-calorie, non-perishable instant foods for soldiers fighting in Europe. Adding hot water gave combatants nutritional meals that would provide energy for long stretches.
In 1958, the Japanese introduced ramen — flash-dried noodles packaged with seasonings that could be cooked by just adding water. Future generations of college students owe a debt of gratitude to Momofuku Ando’s invention.
Dehydrated and freeze-dried foods gained popularity during the second half of the 20th century, particularly during the Space Race, when Apollo astronauts needed access to meals that could be rehydrated and consumed easily.
